Pistachio and Saffron Yogurt Oatmeal

INGREDIENTS

  • 2 tsp Honey
  • 1/2 cup Oats, old-fashioned
  • 1 tbsp Dash of saffron threads
  • 1 cup Dash of salt
  • 1 tbsp Pistachios
  • 1 tbsp Orange juice
  • 2 tbsp 2% greek yogurt
  • 3/4 cup Water

 

DIRECTIONS:

Bring water to a boil in a medium saucepan. Stir in oats and dash of salt. Reduce heat; simmer 5 minutes, stirring occasionally. Remove from heat, and stir in orange juice and 1 teaspoon honey. Whisk together yogurt and saffron in a bowl. Dollop yogurt on oatmeal; sprinkle with pistachios. Drizzle with 1 teaspoon honey.
